Disponga en una cacerola de cobre o aluminio, o la que tenga con un poquito de agua, hasta cubrir la mitad del mam\u00f3n. Agregue el az\u00facar en igual proporci\u00f3n. Hierva a fuego lento hasta que se ponga transparente, y no revuelva para que no se deshaga la fruta.<\/span><\/p>\n<p><span lang=\"ES\" style=\"font-size: 12pt; font-family: Arial, sans-serif;\">El bicarbonato o el clavo de olor son para darle un toque de aroma. Adem\u00e1s, as\u00ed el mam\u00f3n se endurece por fuera. Se le da el punto exacto.<\/span><\/p>\n<p><span lang=\"ES\" style=\"font-size: 12pt; font-family: Arial, sans-serif;\">La cocci\u00f3n dura dos horas a fuego lento. Pero si se evapora el jugo hay que agregar agua hervida y hasta la mitad de la preparaci\u00f3n.
